An interesting fact about fresh craft coffee beans is that they come in a variety of shapes & colors and are not actually brown until they are roasted.
In the specialty coffee industry, we call raw coffee beans "Green Beans". We call them green beans because until recently, the majority of coffee was processed through the washing method, which gives the coffee a greenish hue by removing the hull from the coffee fruit before drying.
However, in the last few decades, we are seeing more coffees processed in unique ways! For example, I am a lover of the natural and honey processing methods, as they provide sweeter and more pungent fruit notes to the coffee experience.
