Single Estate Geisha Honey | Rare Costa Rican Coffee
The one that makes you stop mid-sip and ask what you're drinking.
Geisha is the variety that rewrote what people thought coffee could taste like. Floral, tea-like, and nothing like the coffee most of us grew up on. It is also difficult to grow, low-yielding, and fussy about altitude, which is why it stays rare and why it costs what it costs.
This lot scored 90 points — Q-Graded Outstanding. Delicate florals up front, smooth honey chocolate through the middle, a medium body that keeps it from feeling thin, and a bright citrus finish that leaves the cup clean. Elegant is the right word, and it is not a word I use often.
Here is the part people don't expect: it is easy to drink. A lot of rare coffee asks you to work for it. This one doesn't. The flavors are clear and balanced enough that you don't need a vocabulary to enjoy it — you just notice that it tastes like nothing else in your cabinet.
Honey processing is part of why. Washed coffee strips the fruit off before drying. Natural dries with the whole cherry on. Honey splits the difference — the skin comes off, the sticky sweet layer stays, and the coffee dries with it. Sweetness and body without losing the clarity that makes a Geisha worth drinking.
This one comes from Finca Monteroga in De Los Santos, Tarrazú, grown at 1,900 meters and processed at Tío Juan Micromill. Juan Rafael Montero Gamboa runs both. He played professional soccer, quit, and bought land to grow organic avocados. When the avocado crop failed, his neighbors told him to plant coffee instead. He built his own micromill in 2015 to control quality end to end, and makes his own fertilizer from organic material and manure from the horses and goats he keeps. The mill is named for his grandfather.
Every bag is small-batch clean-roasted, packed fresh, and marked with a roast date — not a "best by" date invented by a warehouse. If you have ever wondered why your coffee tastes bitter at home, the beans were probably the problem. Better coffee starts with better beans, and this is about as good as beans get.
You do not need a café, a $900 machine, or a PhD in coffee words to enjoy this. Fresh beans, careful roasting, rare variety, better cup. No snobbery required.
